Makes 4 servings
- 1 6-oz. package orange-flavored gelatin
- 1 cup boiling water
- 1 cup ice cubes
- 1 11-ounce can mandarin oranges, drained; reserve 8 slices
for garnish
- 1 cup softened VELVET Mimosa Sherbet
- 4 fresh mint leaves
- 4 tablespoons whipped topping
Dissolve gelatin into boiling water. Stir well. Add 1 cup ice
cubes and stir until ice cubes are melted. In the bottom of
four stemmed glassware, place 6-7 mandarin orange slices in
each. Measure out 3/4 cup of gelatin liquid and divide into
the bottom of the glassware, over the orange slices. Chill until
set, about 45 minutes. Set other gelatin aside. Soften sherbet
and stir into reserved orange gelatin mixture. Mix until completely
smooth. Place the remaining liquid (approximately 1/2 cup per
glass) over the chilled and set gelatin. Chill until ready to
serve. Top each dessert with 1 tablespoon of whipped topping,
two slices of orange and a mint leaf.
