VELVET Ice Cream Truffles

1 container VELVET Peppermint Stick Ice Cream
1 container VELVET Spumoni Ice Cream
1 container VELVET Churned Chocolate Ice Cream
1 container VELVET Cinnamon Ice Cream

Coating:
Chopped pecans
Crushed peppermint stick candies
Dark chocolate cocoa
Toasted coconut
Toasted chopped pecans, walnuts, almonds or pistachios

Place a jelly-roll pan in the freezer, lined with parchment paper. Place each coating ingredient into a small bowl. With a small ice cream scoop or melon ball scoop, scoop out the ice cream and roll in the coatings, selecting one for each flavor. Mix coatings with various flavors of ice cream. Freeze immediately in a single layer on jelly-roll pan. Serve three different ice cream truffles on a plate with a Christmas cookie.
