Ice Cream Topped Bunnuelos

2 flour tortillas (about 6 inch diameter or 1 oz)
Non-stick vegetable oil cooking spray
2 teaspoons sugar
1 cup Velvet Butter Pecan and Cashew No Sugar Added Ice Cream
½ teaspoon cinnamon
Cinnamon for garnish

Preheat oven to 375. Combine sugar and cinnamon in a small bowl. Lightly spray both sides of tortillas with cooking spray. Sprinkle sugar mixture on 1 side of each tortilla. Bake on a cookie sheet for 8 minutes or until lightly browned and crisp. Remove from ice cream and place ½ cup scoop onto the middle of each tortilla. Dust a touch of additional cinnamon on top of ice cream and serve. Serves one
